Rainbow Cupcake

Hi people!
Is the last practical before the end of 2011!
The rainbow cupcake!:D
You can make these colourful cupcakes for this holiday seasons for your family and friends!

Ingredients
• 310 g all-purpose flour
• 9 g baking powder
• 2 g baking soda
• 3 g salt
• 120 ml milk
• 120 ml vegetable oil
• 5 ml vanilla extract
• 115 g butter
• 200 g white sugar
• 3 eggs, room temperature
• red food coloring
• blue food coloring
• green food coloring
• yellow food coloring
Directions
1. Preheat an oven to 350 degrees F (175 degrees C). Line two 12 cup muffin pans with paper baking cups.

2.Stir together the flour, baking powder, baking soda, and salt in a large bowl.

3.Whisk together the milk, vegetable oil, and vanilla extract in a separate bowl until evenly blended; set aside.

4. Beat the butter and sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color.

5. Add the room-temperature eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Pour in the flour mixture alternately with the milk mixture, mixing until just incorporated.

6. Divide the cake batter into four separate bowls. Add a few drops of food coloring into one bowl of batter and stir; add more food coloring, if necessary, to reach the desired shade. Repeat with the remaining colors and bowls of batter.

7. Using a different spoon for each color batter, spoon a small spoonful of each color into the cupcake liners, until 1/2 to 3/4 full. Do not mix the batter once it is in the cupcake liner.

8.Bake in the preheated oven until a toothpick inserted into the cake comes clean, about 15 to 20 minutes.

Dining in The Dark!

Culinary IG participated in this year RP Dining in The Dark again!
The event which participants will eat in the dark and
the fund raised will goes to Singapore Association of the Visually Handicapped. :)

IGs participated: Culinary IG, Eureka IG, Hotel Fuze IG, Service Learning Club

It was another exciting event and it is in Halloween theme!
So our roles in the event, of course is do the preparation of food!

Let's start off with some small snacks.

 Lastly, the wormy jelly! 

It was enjoyable and hope our participants enjoy the meal in the dark.

Apple Pie Practical

The Apple Pie Practical!
Pastry
Serves 3 (Makes 6 tarts)                                                                                                                    
·         1 cups flour
·         75g shortening
·         A pinch of salt
·         3 tbs cold water
Direction
1.      Mix flour and salt in a large bowl
2.      Cut in shortening until crumbly
3.      Add in water, one tablespoon at a time until the dough forms a ball.
4.      Refrigerate until ready to use

Mini Apple Pie
Makes 6 tarts (Serves 3)
Ingredients
·         2 Apple
·         3 tbs White sugar
·         2 tsp Butter
·         1/8 tsp Cinnamon (optional)
·         Walnut (optional)
·         Almond figs (optional)
·         Pistachios (optional)
·         Cream crackers (optional)
·         Breadcrumbs (optional)
Optional things: To your taste
Directions
1.      Peel and core apples
2.      Chop apples (small chunks)
3.      Melt sugar on medium high heat
4.      Add butter, mix thoroughly
5.      Add in chopped apples. Cook until apples are caramelized.
6.      (Optional) Add in optional ingredients.
7.      Flatten pastry (very thin base) onto the aluminum trays
8.      Top with apple topping.
9.      Cover with another thin layer of pastry. Score the pastry.
10.  Bake in pre-heated 175 degrees oven for 30 minutes or till pastry is golden brown.

Ondeh Ondeh Practical!

The Ondeh Ondeh Practical!

Ingredients:
  • 250g of glutinous rice flour
  • 100ml of water 
  • ½ teaspoon of pandan essence/vanilla essence
  • ¼ teaspoon of pandan colouring
  • 1-2 pinch of salt
  • 1 piece of gula Melaka ( cut into smaller pieces )
  • Some grated coconut ( suitable amount )

Steps:
 
1) Pour the water into the glutinous rice flour and mix.
2) Add in other ingredients ( pandan essence/vanilla essence, pandan colouring, salt ) for its skin until it forms a dough.
3) Form small balls into sizes and fill them with a little piece of gula Melaka and seal them up.
4) Boil ¾ water in a pot.
5) Put the sealed balls into the boiling water.
6) When the balls float on the water, take them out and sprinkle the grated coconut on them.
7) They are ready to be served!

HOLIDAY SPECIAL !!!

We’ll be having IG bonding session during this September!
Going around Singapore to find for food, solve the puzzle and most of all, bond with the IG members!

Venue: Raffles City, Outside Starbucks (Alight at City Hall MRT station)

This bonding session is not sponsor by the IG Funds, thus tentatively, we estimated $5 from you. Amount may decrease depending on how many participants.)

Baked Pasta

Baked Pasta!
Let us fry, cook, then bake!
 
Tomato-Cream Sauce for Pasta (Serves 5)
Ingredients:
• 2 tablespoons olive oil
• 1 onion, diced
• 1 clove garlic, minced
• 1 (14.5 ounce) can Italian-style diced tomatoes, undrained
• 1 tablespoon dried basil leaves
• 3/4 teaspoon white sugar
• 1/4 teaspoon dried oregano
• 1/4 teaspoon salt
• 1/8 teaspoon ground black pepper
• 1/2 cup heavy cream
• 1 tablespoon butter

Steps:
1. In a saucepan, saute onion and garlic in olive oil over medium heat. Make sure it doesn't burn.
2. Add tomatoes, basil, sugar, salt and pepper.
3. Bring to boil and continue to boil 5 minutes or until most of the liquid evaporates.
4. Remove from heat; stir in whipping cream and butter. Reduce heat and simmer 5 more minutes
5. Pre-heat oven to 175degrees.

6. Boil your macaroni for 5mins.(add a spoonful of oil and a pinch of salt.)
7. Put your desired toppings with macaroni in the baking tin then pour in the cream sauce.
8. Sprinkle the cheese on the top.
9. Bake for 15mins (till it turns golden brown)

Chicken Pattie

Is the chicken pattie session!
Ever think how to make the pattie for your burger?
Here's one of the choice! :D

Chicken patties : Serves 4-6


Ingredients:
• 500g minced chicken
• 1 onion (diced)
• 1 egg
• 1 capsicum
• 1 carrot
• 1 celery stalk
• 1 teaspoon of chopped garlic
• 1 tablespoon of sweet chili or BBQ sauce
• 1 handful of herbs (according to desired taste – paprika, nutmeg..
• 1 can of cream of chicken soup

Method:
1. Finely chop/grate vegetable, chicken breast
2. Combine all ingredients and form into patties of desired size
3. Shallow fry in hot oil
4. Patties can be placed in a lightly greased dish and baked in oven at 180 degrees Celsius for 20-30 minutes.

For variations: This mixture can be put into a lined loaf tin for a chicken meatloaf. Bake for 35 minutes at 180 degrees Celsius.
